1. The following portions are if you are serving 8 people, adjust quantities use to suit the amount of people, I have used this on many occasions at BBQ’s and it is always a hit, remember small portions are the trick. Now peel and wash 4 large sweet potatoes , cut into cubes and weigh. Now peel and cut 2 of your favourite white potatoes, cut these into cubes so that you end up with half the weight of your sweet potatoes.
2. Wash and clean sweet potatoes before boiling in large pot of water, allow to become soft, drain off water, now what we need to here is weigh all the potatoes before mashing, so if we have ended up with a 800grams of potato we need 800grams of butter, this is where your sweet potato mash comes alive.
3. Combine the equal amount of butter with the potato and start mashing, this will form a buttery , rich , sweet potato mash, as I stated earlier , small portions are only required as you would imagine it is very rich in taste, generally I only serve a maximum level tablespoon or a half ice-cream scoop. You can guarantee that they will be wanting more of your sweet potato mash.
